
Here is my recipe for Couscous salad:
1 cup cooked couscous
1/2 Cucumber - diced
1 med. Green or Red Pepper - diced
Handful kalamata olives - diced
handful cherry/grape tomatoes - quartered
1/2 block feta cheese - crumbled (more is better than less)
1/2 red onion - diced
Some dried basil and oregano
Black pepper
Olive Oil
Red Wine Vinegar
Mix all ingredients, then dress with oil and vinegar. Yummy! Even better on day two!
